Banana Berry Power Muffins (protein-packed, gluten + dairy free options)

I love Strawberry season because it means all these delicious strawberry recipes!
These strawberry banana protein muffins are the PERFECT mid-day snack. PLUS they only take about 30 total minutes to whip up.

You ready? let’s bake! (maybe on a not too HOT day like today though lol)

What you’ll need:
(Wet ingredients)
2 bananas, mashed
2 eggs
1/4 cup dairy free milk (or milk of choice) or water (water actually works great if you want to skip the milk content)
3 tbsp pure (or NSA) maple syrup
1 cup cashew butter (could use PB or almond but I feel like cashew has a less nutty taste)

(Dry ingredients)
1/2 cup vanilla protein powder (I used Beyond Yourself) you could use strawberry or vanilla vegan or just collagen, too. Stick to more bland flavors if not using strawberry, though!
1/2 tsp baking soda
1/2 tsp baking powder
8 strawberries, sliced finely

DIRECTIONS:

Preheat your oven to 350° and either a line a muffin tin with liners or spray with nonstick cooking spray. Mix your wet ingredients in one bowl and your dry ingredients in another. Then, slowly fold your dry mixture into the wet mixture, until well combined. Hand mix in half to the sliced strawberries and then pour your batter into 10 prepared muffin cups. Next, place the rest of your strawberries on top. Bake for 14 minutes and immediately pull out and place onto a cooling rack while the muffins are still in the pan. This is SUPER important because you do not want to over cook these muffins since you are baking with protein powder, but since they are sitting on a cooling rack in the muffin tin, they will firm up. Let them sit on top of the cooling rack for at least 15 minutes and then enjoy!
