Healthy French Toast Bites

Just in time for Mother’s Day! What a treat, hey!?
A fun, tasty breakfast that is so perfect with your favorite dipping sauces! These healthy french toast bites are seriously the best- soft on the inside but perfectly crispy on the outside. They’ve got a great cinnamon and vanilla flavor. I love making these for breakfast on a slow Saturday and then having leftovers for Sunday… maybe even Monday!
Other Ideas for this Recipe:
Dipping sauces: pure or NSA maple syrup, yogurt mixed with cinnamon, warmed berries mashed, light cool whip, etc., there are so many options!
Coating: you can make a cinnamon sugar mixture (0 cal sugar + cinnamon) and coat the outside of the healthy french toast bites with it! So easy and makes them even tastier.
Substitutions:
For this recipe, if you don’t have vanilla protein that’s totally fine! You can use vanilla extract and a little bit of sweetener instead. I would do 1 tsp vanilla + 1 tsp coconut sugar to replace the vanilla protein. I like having the protein in the recipe though! I use the Beyond Yourself brand.
Ingredients
  • 3–4 slices of bread of choice (I use blue menu whole wheat & quinoa)
  • 2 eggs
  • 1/2 cup unsweetened cashew milk
  • 1 tsp cinnamon
  • 2 scoops vanilla protein
  • 1 tsp coconut sugar
Instructions
  1. Mix everything together and soak the cubes in it.
  2. Heat a skillet over low medium heat and add some coconut oil or light butter to it.
  3. Add the bread cubes in and cook for about 5-6 minutes making sure to move them around so they don’t stick.
  4. Makes about 2-3 servings so you can have leftovers.
  5. Paired with NSA maple syrup and plain greek yogurt
