Mini Blueberry Protein Donuts

Sep 11, 2022

Ingredients:

  • 113g 1% or 2% cottage cheese (I use 2% lactose free)
  • 45g liquid egg whites
  • 50g flavoured protein powder (I use Alani Frosted Flurry or PEScience Vanilla)
  • 10g sweetener
  • 25g organic coconut flour
  • Splash of vanilla
  • 50g fresh blueberries
  • 5Tbsp of water (Can add more if your ‘batter’ looks too thick, depending on your protein powder used)

Directions:

  • Preheat oven to 325 and bake for 18-22 minutes.  I like using the silicone donut pan for ease of removing. Mix all ingredients together.  Add water and blueberries last.
  • Refrigerate them in a sealed container once cool or enjoy right away!
